By default, Shopify theme doesn't have feature to hide unavailable options in Swatch/Dropdown.
Most client's wants to hide options which are Unavailable in store.
So I can customise theme so that only available options will be visible.
You can also contact of you want to hide Sold out variants on product page of shopify.
*Note: This is only for Unavailable variants, Not Sold Out.
